These seed oil free zucchini noodles with pesto are a refreshing, low-carb alternative to pasta. Perfect for a light, healthy meal.
This dish is quick to prepare and pairs beautifully with grilled chicken or fish.
2 large zucchinis
1 cup fresh basil
2 cloves garlic
1/4 cup Parmesan cheese
1/4 cup pine nuts
1/2 cup olive oil
Salt, pepper
Spiralize the zucchinis into noodles using a spiralizer or cut them into thin strips with a knife.
In a food processor, combine the basil, garlic, Parmesan cheese, and pine nuts. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency. Season with salt and pepper.
Toss the zucchini noodles with the pesto until well coated. Serve immediately, topped with extra Parmesan cheese if desired.
