1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup milk
1 large egg
2 tbsp melted butter (or ghee)
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the milk, egg, and melted butter (or ghee).
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if the batter is a bit lumpy.
Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or ghee. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
